Wild mushroom risotto with bacon and asparagus
Ingredients:

200g mushrooms
1 clove garlic crushed
1 tbsp. olive oil
1 onion chopped
80g back bacon chopped into small pieces
375g of cooked brown basmati rice
200g bunch asparagus
80g half fat crème fraiche
50g parmesan cheese grated

Method:
Wild mushroom risotto with bacon and asparagus:  First of all, gently fry the onions, garlic, bacon and mushrooms for 5
minutes in olive oil until soft.   Use a non stick pan.   In addition pour 100mls water in the pan.
Chop asparagus into 2 inch pieces.

Furthermore add the asparagus to the pan and bring to the boil then simmer gently for 2-3 minutes.
Cook the rice according to the instructions.

Finally, take the pan off the heat and add the rice, the parmesan and the crème fraiche.
Reserve some parmesan to sprinkle on top of cooked rice.  In conclusion, serve and sprinkle with the remaining parmesan.
